Chugging Chocolate

There are times you just need chocolate. Eat it without guilt with this light & luscious chocolate dessert.
Dairy Free Chocolate Peppermint Mousse
- Ice and water (for ice bath) 
- 8 ounces filtered water 
- 10 oz. bittersweet 70 percent chocolate, chopped 
- 1 tablespoon Pure Maple Syrup or Yacon Syrup (optional) 
- 3–4 drops Peppermint Vitality Essential Oil

Instructions:
- In a medium saucepan, bring filtered water to a boil. Turn off heat and add Maple or Yacon Syrup and chocolate. 
- Whisk until completely melted and smooth. 
- Add Peppermint Vitality Essential Oil and whisk again. Peppermint Vitality Oil is strong. Start with 1-2 drops, taste then add another 1-2 drops. 
- Pour melted chocolate into the mixing bowl in the ice bath and whisk vigorously until mixture becomes thick and ribbon-like. 
- Spoon mousse into petite serving cups or ramekins and refrigerate 1 hour. 
- Garnish with a light dusting of cocoa powder, powdered sugar or teaspoon of coconut milk whip cream. Add sprig of fresh mint.
